Ingredients

  • 4 Tbs. sliced almonds
  • 2 2/3 cups Greek-style plain yogurt
  • 4 cups fresh fruit such as plums, peaches, nectarines or figs, coarsely chopped
  • 4 tsp. honey

Instructions

  • Preheat an oven to 350°F.
  • Spread the almonds on a baking sheet and toast in the oven until fragrant and just turning golden, about 3 minutes. Transfer to a plate to stop the cooking and let cool.
  • Spoon 1/3 cup of the yogurt into the bottom of a large goblet or parfait glass. Spoon about 1/2 cup of the fruit over the yogurt. Sprinkle with 1/2 Tbs. almonds and drizzle with about 1/2 tsp. honey. Repeat the layers, ending with the honey. Repeat to assemble 3 more parfaits. Serve immediately, or refrigerate for up to 2 hours. Serves 4.
