Ingredients

  • For the syrup
  • 2 1/2 - 3 cups water
  • 1 - 1 1/4 cup sugar
  • 1 tsp fine cinnamon
  • 1 tbsp lemon juice
  • For the batter
  • 1/2 cup apricot jam
  • 2 tsp bicarbonate of soda
  • 1/2 cup butter
  • 1 1/2 cup flour
  • 1 tsp salt

Instructions

  • Start with the syrup, mix the ingredients for the syrup and bring to a boil.
  • Now start with the batter. Mix the apricot jam, bicarbonate of soda and butter in a thick base pot till the butter has melted.
  • Add the dry ingredients and mix well.
  • Add spoonfulls of batter to the boiling syrup. The bicarbonate of soda will cause a effervescent effect.
  • Put a lid on and boil for not more than 10 minutes.
  • Serve with custard
