Wild Rice Salad With Chestnuts

This delightful wild rice salad is a harmony of flavors and textures. Nutty wild rice is mixed with crunchy radishes, vibrant green onions, and tender chestnuts. Tossed in a tangy cider vinegar dressing, each bite offers a medley of tastes and a satisfying crunch. Perfect for a light lunch or as a colorful side dish for any meal.

Ingredients

  • 1 cup wild rice
  • 1/2 tsp. salt
  • 4 cups cold water
  • 2 large radishes, thinly sliced
  • 2 green onions, thinly sliced
  • 1/4 lb. peeled cooked chestnuts, sliced
  • Salt and freshly ground pepper, to taste
  • 1 1/2 Tbs. cider vinegar
  • 1/4 tsp. prepared mustard
  • 6 1/2 Tbs. vegetable oil

Instructions

  • Rinse the wild rice in cold water, then drain. In a large saucepan, combine the rice, salt and water. Bring to a simmer, cover and cook until the rice is al dente, about 40 minutes. Drain the rice in a large sieve. Rinse with cold water and set aside to cool. The rice may be prepared a few days ahead.
  • In a large bowl, combine the cooked rice, radishes, green onions and chestnuts. Season with salt and pepper.
  • In a small bowl, whisk together the vinegar and mustard. Slowly whisk in the oil. Pour the dressing over the salad and mix well. Serves 4 to 6.
