Wheat Free Spicy Pork Fajitas
These homemade gluten-free tortillas are soft and flavorful, perfect for wrapping up delicious pork fajitas. The pork is marinated with a tangy and slightly spicy mixture, creating a mouthwatering filling alongside colorful vegetables. It's a satisfying meal that's great for sharing with loved ones.

Ingredients
- Gluten Free Tortillas:
- 2 c. Gluten Free All-Purpose Flour Mix
- 1 1/2 tsp. xanthan gum
- 2 tsp. sugar
- 1 tsp. salt
- 1 c. warm water
- Pork Fajitas:
- 350g pork fillet
- Marinade for pork:
- Juice of one lemon
- 1 tsp caster sugar
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- Veg:
- 1 carrot sliced thinly
- 1 corguette sliced thinly
- 1 pepper sliced thinly
- Marinade for veg:
- 10ml sunflower oil
- 1 tsp dried coriander
- juice of half a lemon
- 1 tsp piri piri spice
- You will also need:
- Parchment paper
- hot dry frying pan on medium heat
- rolling pin
Instructions
- For the wheat free tortillas: Mix dry ingredients together, then mix in the water until you have a supple dough. (I do this with my hands). Meanwhile mix the pork with the marinade and leave to the side.
- Separate the dough into 8 pieces, roll into balls. Use a piece of parchment paper flour it and the rolling pin, roll out a ball until flat, about 1/2cm deep.
- Put the tortilla into the hot dry pan, cook for a couple of minutes each side, or until one side has risen and browned in places. Move the tortilla to a plate and repeat for each ball of dough. (you can heat these later or freeze by separating each tortilla with parchment)
- For the pork fajitas: Mix the marinade with the veg, toss into a wok/frying pan, cook for 3-5minutes. Add the pork and cook til browned. (remember to open a window, the spice will cause a little smoke)
- Add some cooked rice and corn on the cob for those greedy souls.
