Ingredients
- 3 Courgettes
- 2 Large Leeks
- 5 Closed cup mushrooms
- Knob of Butter
- Splash of Oil
- Chopped Mint, Rosemary and Thyme
- Bacon
Instructions
- Halve and slice the courgettes
- Halve and slice the Leeks
- Slice the mushrooms
- Melt the butter in a large frying pan, add a tiny splash of oil
- When hot, add the bacon to the pan, stirring till cooked
- Add the leek and Mushrooms, stirring till the mushrooms are just soft
- Add the courgette, continue stirring until just cooked
- Stir in the herbs, fry for a further 3 minutes
