Ingredients

  • 3 Courgettes
  • 2 Large Leeks
  • 5 Closed cup mushrooms
  • Knob of Butter
  • Splash of Oil
  • Chopped Mint, Rosemary and Thyme
  • Bacon

Instructions

  • Halve and slice the courgettes
  • Halve and slice the Leeks
  • Slice the mushrooms
  • Melt the butter in a large frying pan, add a tiny splash of oil
  • When hot, add the bacon to the pan, stirring till cooked
  • Add the leek and Mushrooms, stirring till the mushrooms are just soft
  • Add the courgette, continue stirring until just cooked
  • Stir in the herbs, fry for a further 3 minutes
