Ingredients

  • 4 eggs
  • 225g self raising flour
  • 225g butter
  • 225g sugar
  • for the filling
  • 3 tblsp jam
  • 3 tblsp double whipped cream

Instructions

  • mix the butter and the sugar together in a bowl and add one egg at a time whisking
  • sieve the flour into the mixture and fold in with a spoon
  • greese the two 17inch cake tins and distribute the mixture betweeen the two
  • bake for 20-30 minutes on 180/gas mark 4
  • whisk the cream until thick and spread over the cool sponge and then finally the jam
