- 10 Cherry peppers
- 1 slice of fresh tuna
- 1/4 litre good olive oil
- white wine vinegar
Instructions
- Carefully cut the tops off the cherry peppers and deseed. Discard the seeds and tops
- Marinate the peppers in white wine vinegar for 24 hours
- Wash the peppers and blanch in boiling water for a minute or so
- Flash fry the tuna steak in until it is just cooked through. Cut into small squares and stuff each pepper
- Pour the oil over all the peppers ensuring each is covered. Either seal in a jar or serve fresh
