  • 10 Cherry peppers
  • 1 slice of fresh tuna
  • 1/4 litre good olive oil
  • white wine vinegar

Instructions

  • Carefully cut the tops off the cherry peppers and deseed. Discard the seeds and tops
  • Marinate the peppers in white wine vinegar for 24 hours
  • Wash the peppers and blanch in boiling water for a minute or so
  • Flash fry the tuna steak in until it is just cooked through. Cut into small squares and stuff each pepper
  • Pour the oil over all the peppers ensuring each is covered. Either seal in a jar or serve fresh
