Ingredients

  • 1 can (185g)of Tuna in brine or water
  • 1 can (400g) Mixed Bean Salad - I use Napoli
  • 1 small can (198g) Sweetcorn in water
  • 1 large carrot grated
  • 8-10 cherry tomatoes cut in quarters
  • 75g chopped cucumber
  • 4 spring onions chopped
  • handful of fresh coriander chopped
  • Good squeeze of Lemon
  • Seasoning

Instructions

  • Drain Tuna. Drain Sweetcorn, drain and rinse Mixed Bean Salad. Combine all ingredients in a bowl and season well.
  • Serve alongside a Jacket Potato if using.
