Ingredients

  • 3 large tomatoes, diced
  • 2 green peppers, diced
  • 1 preserved lemon
  • 1 tbsp lemon juice
  • 1 clove of garlic, chopped
  • half a tsp ground cumin
  • 2 tbsp olive oil
  • 1 red onion, finely chopped
  • 1 tbsp capers, rinsed and chopped
  • 1 large handful fresh coriander, chopped
  • salt and black pepper

Instructions

  • Rinse the preserved lemon, cut in half, remove and discard the pulp, and dice the peel. Put into a bowl.
  • Add the remaining ingredients, except the coriander. Mix well.
  • Season, and scatter over the coriander.
