Tomato Marinated Tuna Steak

Ingredients
- For the Tuna:
- 2 tuna steaks
- 1 tin chopped tomatoes
- 1tbsp extra virgin olive oil
- 2 tomatoes diced
- 1 onion
- 2 tbsp parsley
- 2 tbsp basil
- 2 tbsp lemon juice
- 100g button mushrooms sliced
- To Serve:
- 150g Cous Cous
- 3 tbsp lemon juice
- 400g seasonal veg
Instructions
- Heat oil in the pan and add onions, mushrooms and tinned tomatoes.
- Add tuna steak, tomatoes, lemon juice and spices and fry for 3-4 minutes each side of the steak
- Meanwhile, prepare veg and cous cous.
- Mix lemon juice in with Cous Cous
- Serve
