Tiramisu

Ingredients
- 20-24 sponge fingers
- 2tbsp cold black coffee
- 2tbsp coffee essence
- 2tbsp amaretto
- 4 egg yolks
- 90g caster sugar
- 3 drops vanilla essence
- grated rind of half a lemon
- 350g mascarpone cheese
- 2tsp lemon juice
- 250ml double cream
- 1tbsp milk
- 30g lightly toasted almonds
- 2tbsp cocoa powder
- 1tbsp icing sugar
Instructions
- arrange half of the sponge fingers in the base of a serving dish.Combine the coffee,coffee essence and amaretto and pour half the mixture over the sponge fingers.
- put the egg yolks,sugar,vanilla essence and lemon rind in a heat proof bowl and stand over a pan of gently simmering water and whisk until thick and creamy.
- put the marscapone and the lemon juice in a bowl and beat until smooth.Then combine the egg and the cheese mixtures, when evenly blended pour half over the fingers and spread out evenly.
- add another layer of fingers,sprinkle with the remaning coffee and top with the rest of the cheese and egg mixture and leave to chill for 2 hours.
- to serve,whip the cream and milk togeher until stiff then spread it over the dessert.Sprinkle with the almonds.Finnaly dust with an even layer of cocoa powerder.
- Then lightly dust with icing sugar.
