Ingredients

  • 1 stick/1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown brown sugar, packed
  • 1 large egg
  • 1/4 teaspoon pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon corn starch
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups mini chocolate chips
  • 8 Thin Mint Girl Scout Cookies, finely crushed

Instructions

  • Preheat oven to 350 degrees and line a large baking sheet with a silpat liner or parchment paper.
  • Cream butter and sugar until light and fluffy. Add egg and vanilla, mixing to combine. Add flour, cocoa powder, baking soda, corn starch, salt, chocolate chips and crushed Thin Mints, mixing until just combined.
  • Scoop dough onto prepared baking sheet about 1 inch apart, pressing cookies down almost flat before baking. Bake for 10-12 minutes until baked through. Let cool for 10 minutes on baking sheet before transferring to cooling rack. Serve with milk and enjoy!
