Thai Green Turkey Meatballs

Ingredients
- 2 free-range eggs
- 75g/3oz cooked turkey mince
- 90g/3¼oz breadcrumbs
- 1 tsp Thai green curry paste
- 2 tbsp plain flour
Instructions
- Preheat the oven to 180C/350F/Gas 4.
- Beat one of the eggs in a bowl. Stir in the turkey mince, 30g/1oz breadcrumbs and Thai green curry paste until well combined. Divide the mixture into four portions and roll each into a ball.
- Beat the remaining egg in a bowl, sprinkle the flour and remaining breadcrumbs onto separate plates. Roll the meatballs in the flour, then dip in the beaten egg and roll in the breadcrumbs.
- Transfer to a baking tray and bake in the oven for 15-20 minutes, or until golden-brown.
