These Thai Green Curry Turkey Meatballs are a delightful twist on classic meatballs, bringing an aromatic and spicy kick to your meal. Made with cooked turkey mince, Thai green curry paste, and a crunchy breadcrumb coating, these meatballs are baked to a crispy golden-brown perfection. Ingredients

  • 2 free-range eggs
  • 75g/3oz cooked turkey mince
  • 90g/3¼oz breadcrumbs
  • 1 tsp Thai green curry paste
  • 2 tbsp plain flour

Instructions

  • Preheat the oven to 180C/350F/Gas 4.
  • Beat one of the eggs in a bowl. Stir in the turkey mince, 30g/1oz breadcrumbs and Thai green curry paste until well combined. Divide the mixture into four portions and roll each into a ball.
  • Beat the remaining egg in a bowl, sprinkle the flour and remaining breadcrumbs onto separate plates. Roll the meatballs in the flour, then dip in the beaten egg and roll in the breadcrumbs.
  • Transfer to a baking tray and bake in the oven for 15-20 minutes, or until golden-brown.
