Sweet Potatoes, Wheat Berries, And Eggs

This recipe combines the earthy nuttiness of wheat berries with the natural sweetness of roasted sweet potatoes, all bound together with creamy goat cheese. A simple yet flavorful dish that can be enjoyed at any mealtime.

Ingredients

  • 1 medium sweet potato
  • ½ cup wheat berries
  • 1 tablespoon minced (fresh) rosemary
  • 2 tablespoon olive oil
  • ¼ teaspoon salt
  • 3 ounces goat cheese
  • 3-4 eggs

Instructions

  • Rinse wheat berries and place in a pot with water. Bring to a boil and continue to cook until wheat berries are tender- 45-60 minutes.*
  • Preheat oven to 400˚. Peel and cut sweet potatoes in to 1/4" cubes. Toss with 1 tablespoon olive oil, salt, and minced rosemary. Roast for 15-18 minutes until sweet potatoes are tender.
  • Toss together wheat berries, sweet potatoes, goat cheese, and 1 tablespoon olive oil. Prepare eggs to your liking and serve with wheat berries.
