- 2.5 CM ROOT GINGER
- 1 TSP OLIVE OIL
- 15ML CURRY POWDER
- 1 CAN TOMATOES
- 4 MEDIUM SWEET POTATOES
- CAULIFLOWER
- 100G TRIMMED BEANS
Instructions
- FINELY CHOP ONION, GARLIC, GRATE GINGER
- HEAT OIL,ADD ONION, GARLIC, GINGER, COOK UNTIL SOFTENED, ADD TONATOES AND 150ML WATER.
- PEEL SWEET POTATOE,CUT INTO CUBES, AND TO SAUCE AND SIMMER FOR 15 MINS.
- ADD CAULIFLOWER FLORETS AND BEANS, COKK A FURTHER 15 MINS.
- SERVE WITH RICE AND POPADOMS
