Ingredients
- 1 large peeled and cubed sweet potato
- 1/4 cup tahini
- 2 Tbsp extra-virgin olive oil
- 2 garlic cloves
- 1/2 tsp cumin
- 1/4 tsp paprika
- juice from 1/2 lemon or 1 lime
- 1 tsp orange zest
- 1 tbsp maple syrup
- salt and pepper to taste
Instructions
- Steam or boil the sweet potato until very tender.
- Puree in food processor along with tahini, olive oil, garlic cloves, cumin, paprika, lemon juice, orange zest and maple syrup.
