Ingredients

  • 200g white bread crumbs crusts removed
  • 125g butter
  • 1 onion
  • 1 garlic clove
  • 1 large sprig rosemary & Thyme
  • 6 fresh sage leaves
  • grated zest 1 lemon
  • 50g pine nuts
  • S&P
  • Fresh parsley

Instructions

  • Blitz bread in a food processor to fine crumbs
  • Melt butter in large frying pan then saute onion gently for about 5 mins adding the garlic in for last 2-3 mins or until softened
  • add finely chopped rosemary, thyme & sage leaves
  • Mix into onions and sizzle for a moment then gradually work in the crumbs stirring until butter is absorbed
  • Mix in lemon zest, pine nuts & seasoning and stir over a medium heat for about 7-8 mins until the mixtures is browned and crisp. Mix in parsley and serve
