Ingredients

  • 150g chopped dates
  • 1tsp bicarbonate of soda
  • 1tsp vanilla essence
  • 250ml boiling water
  • 50g butter
  • 150g brown sugar
  • 200g self raising flour
  • 1 egg
  • SAUCE
  • 50g butter
  • 50g brown sugar
  • 2tbsp cream

Instructions

  • Mix together the first 4 ingredients and leave to stand for 15 minutes
  • Mix together the next 4 ingredients and add the date mixture
  • Pour into a greased deep baking tray and cook for 40 minutes on 375f or 190c
  • Melt together the sauce ingredients, bring to the boil and simmer for 2 minutes
  • Serve over the pudding hot or cold
