Sticky Toffee Pudding

Ingredients
- 170g dates (chopped)
- 227ml boiling water
- 1tsp bicarbonate of soda
- 2tsp vanilla essence
- 226g plain flour
- 1tsp baking powder
- 1 egg
- 170g caster sugar
- 56g butter
- For the sauce topping
- 4oz brown sugar
- 3oz butter
- Tub Elmlea double cream
Instructions
- Preheat oven to 180C/fan
- Grease 12 inch by 7 inch dish
- Place chopped dates, bicarbonate of soda, vanilla essence in a jug with the oiling water for 5 mins
- Mix flour, baking powder, egg, caster sugar, butter in a bowl Neil soft and creamy and then add the dates mixture including all the water creating a sloppy batter consistency... Mix well
- Place in greased dish and bake for 40 mins until shrunk from sides and top bounces back!
- Whilst that is baking place sauce ingredients into a bowl, mix and microwave until sauce consistency
- When sponge is done pour topping over and bake for further 5 mins... Remove and cool and divide into 12
- I normally microwave a piece as required for 45 secs. Freezes well
