  • 227ml boiling water
  • 1tsp bicarbonate of soda
  • 2tsp vanilla essence
  • 226g plain flour
  • 1tsp baking powder
  • 1 egg
  • 170g caster sugar
  • 56g butter
  • For the sauce topping
  • 4oz brown sugar
  • 3oz butter
  • Tub Elmlea double cream

Instructions

  • Preheat oven to 180C/fan
  • Grease 12 inch by 7 inch dish
  • Place chopped dates, bicarbonate of soda, vanilla essence in a jug with the oiling water for 5 mins
  • Mix flour, baking powder, egg, caster sugar, butter in a bowl Neil soft and creamy and then add the dates mixture including all the water creating a sloppy batter consistency... Mix well
  • Place in greased dish and bake for 40 mins until shrunk from sides and top bounces back!
  • Whilst that is baking place sauce ingredients into a bowl, mix and microwave until sauce consistency
  • When sponge is done pour topping over and bake for further 5 mins... Remove and cool and divide into 12
  • I normally microwave a piece as required for 45 secs. Freezes well
