Sticky Soy And Apricot Chicken

Ingredients

  • 3 skinless chicken breasts
  • 3 tbsp apricot conserve
  • 2 tbsp dark soy sauce
  • 250ml chicken stock
  • 1 tbsp extra virgin olive oil
  • 1 tbsp cornflour
  • 150g cous cous
  • 200g mixed vegetables
  • 1 small handful of flaked almonds
  • 6 dried apricots

Instructions

  • Add oil to pan and brown chicken on both sides
  • Add chicken stock, soy sauce and apricot conserve to the pan and simmer for 15 minutes or until chicken is cooked
  • Whilst chicken is cooking, cook vegetables of choice and prepare cous cous
  • When chicken is cooked, check consistency of sauce. If it is thick and sticky, do not add cornflour. If it is still watery add cornflour to thicken.
  • Serve cous cous and vegetables, slice chicken and place on cous cous
  • Pour remaining sticky sauce over top of chicken
  • Slice apricots and sprinkle over the top with the flaked almonds
