Ingredients

  • 12 corn tortillas
  • 1/2 grilled flank steak (see related recipe at left)
  • 2 avocados, halved, pitted and peeled
  • 1 cup fresh tomato salsa
  • Juice of 1 lime
  • Salt and freshly ground pepper, to taste
  • 1/2 small romaine lettuce head, thinly shredded (about 2 cups)

Instructions

  • <b>Warm the tortillas and steak</b>
  • Preheat an oven to 350°F. Stack the tortillas, wrap in aluminum foil and heat in the oven until hot, about 10 minutes. Thinly slice the steak across the grain, wrap in aluminum foil and warm in the oven during the last 5 minutes of heating the tortillas.
  • <b>Make the guacamole</b>
  • Meanwhile, in a bowl, using a fork, mash together the avocados, salsa and lime juice. Season with salt and pepper. Transfer to a serving bowl.
  • <b>Serve the tacos</b>
  • Unwrap the tortillas and place in a napkin-lined basket. Unwrap the steak and arrange it on a plate. Place the lettuce in a bowl. Put the steak, tortillas, guacamole and lettuce on the table and let guests make their own tacos. Serves 4.
