Spooncat's Fish Cakes

Ingredients
- 10 white potatoes
- 4 salmon fillets,
- olive oil
- 1 onion
- fresh corriander
- lemon juice
- soy sauce
- honey
- flour
- egg
- breadcrumbs, ready made
Instructions
- Chop up the potatoes and put on to boil
- place the salmon fillets on top of a piece of foil, pour over a little olive oil, some squeezy honey and some soy sauce, with a little salt. Wrap up the foil parcel and place in oven pre heated 180 for approx 20 minutes
- fry oinion in a little oil until soft
- once potatoes done , mash with a little milk add salt if liked. Mix in the cooked onion, fresh corriander and the cooked salmon ,and squeeze in some lemon juice, mash together
- form into cakes then quickly roll in flour, dip in egg and roll in bread crumbs , chill in fridge for 20 minutes then fry for a few minutes each side until golden
