Ingredients

  • 10 white potatoes
  • 4 salmon fillets,
  • olive oil
  • 1 onion
  • fresh corriander
  • lemon juice
  • soy sauce
  • honey
  • flour
  • egg
  • breadcrumbs, ready made

Instructions

  • Chop up the potatoes and put on to boil
  • place the salmon fillets on top of a piece of foil, pour over a little olive oil, some squeezy honey and some soy sauce, with a little salt. Wrap up the foil parcel and place in oven pre heated 180 for approx 20 minutes
  • fry oinion in a little oil until soft
  • once potatoes done , mash with a little milk add salt if liked. Mix in the cooked onion, fresh corriander and the cooked salmon ,and squeeze in some lemon juice, mash together
  • form into cakes then quickly roll in flour, dip in egg and roll in bread crumbs , chill in fridge for 20 minutes then fry for a few minutes each side until golden
