Spicy Beans With Tomatoes

Ingredients
- 2 Tbsp Olive Oil
- 1 onion roughly chopped
- 2 Cloves Garlic
- 2 Tsp Ground Cumin
- 1 Tsp Cayenne Pepper
- 400 Gms Tomatoes Chopped
- 40 ml Water
- 2 Tsp Tomato Puree
- 2 Tsp Soft Brown Sugar
- ! Tbsp White Wine Vinegar (or a squeeze of lemon juice)
- 300 Gm Runner Beans
Instructions
- Heat the oil in a heavy bottomed pan and saute the onions until soft and golden. Add garlic and cook for 3 mins until soft.
- Add cumin, cayenne and tomatoes, season and stir until tomatoes are coated in oil. Add water, tomatoe puree, sugar and vinegar and cook on a medium heat for 15 minutes. Stir occassionally and press down the tomatoes so that they disintegrate.
- Stir in the beans and cook for a further 10 minutes. Add a little more water if they seem too dry
- Serve hot, medium hot or cold and enjoy!
