Ingredients

  • 2 Tbsp Olive Oil
  • 1 onion roughly chopped
  • 2 Cloves Garlic
  • 2 Tsp Ground Cumin
  • 1 Tsp Cayenne Pepper
  • 400 Gms Tomatoes Chopped
  • 40 ml Water
  • 2 Tsp Tomato Puree
  • 2 Tsp Soft Brown Sugar
  • ! Tbsp White Wine Vinegar (or a squeeze of lemon juice)
  • 300 Gm Runner Beans

Instructions

  • Heat the oil in a heavy bottomed pan and saute the onions until soft and golden. Add garlic and cook for 3 mins until soft.
  • Add cumin, cayenne and tomatoes, season and stir until tomatoes are coated in oil. Add water, tomatoe puree, sugar and vinegar and cook on a medium heat for 15 minutes. Stir occassionally and press down the tomatoes so that they disintegrate.
  • Stir in the beans and cook for a further 10 minutes. Add a little more water if they seem too dry
  • Serve hot, medium hot or cold and enjoy!
