Spicy Bean Casserole

Ingredients
- 1 Large (or 2 small) Onion, chopped chunky.
- 2 Celery sticks, chopped.
- 50g Bacon, chopped.
- 2 tbsp Olive Oil
- 1, 397g, tin chopped Tomatoes.
- 2 Garlic cloves, crushed.
- 150ml vegetable or chicken stock.
- 1 tsp Cumin Seeds.
- 1/2 tsp Cinnamon.
- 2 tsp Coriander Seeds.
- 1/2 tsp Ground Cumin.
- 1/2 tsp Turmeric.
- 1/4 tsp Chilli Powder.
- 1 tin Chick Peas.
- 1 tin of Black Eyed Beans.
- Approx. 200g Mushrooms, Chopped if large, whole if small.
- Salt & Blk Pepper.
Instructions
- Heat the oil in an oven-proof casserole on the hob. Add Onions, Celery, Bacon & Garlic. Fry over a low heat until soft but not discoloured.
- Stir in all the spices. Cook for a further minute or two.
- Add the tomatoes, stock & S & P. Stir well.
- Add the beans. Stir & bring to the boil. Stir in the mushrooms .
- Cover & put in a preheated oven at 170/fan,190C/gas5 for 20 minutes.
