Ingredients

  • 1 Large (or 2 small) Onion, chopped chunky.
  • 2 Celery sticks, chopped.
  • 50g Bacon, chopped.
  • 2 tbsp Olive Oil
  • 1, 397g, tin chopped Tomatoes.
  • 2 Garlic cloves, crushed.
  • 150ml vegetable or chicken stock.
  • 1 tsp Cumin Seeds.
  • 1/2 tsp Cinnamon.
  • 2 tsp Coriander Seeds.
  • 1/2 tsp Ground Cumin.
  • 1/2 tsp Turmeric.
  • 1/4 tsp Chilli Powder.
  • 1 tin Chick Peas.
  • 1 tin of Black Eyed Beans.
  • Approx. 200g Mushrooms, Chopped if large, whole if small.
  • Salt & Blk Pepper.

Instructions

  • Heat the oil in an oven-proof casserole on the hob. Add Onions, Celery, Bacon & Garlic. Fry over a low heat until soft but not discoloured.
  • Stir in all the spices. Cook for a further minute or two.
  • Add the tomatoes, stock & S & P. Stir well.
  • Add the beans. Stir & bring to the boil. Stir in the mushrooms .
  • Cover & put in a preheated oven at 170/fan,190C/gas5 for 20 minutes.
