Ingredients

  • 250g (9oz) sultanas
  • 250g (9oz) currants
  • 250g (9oz) caster sugar
  • 375ml (13fl oz) cold tea
  • 1 free-range egg
  • 500g (1lb 2oz) self-raising flour
  • 1tsp mixed spice
  • 1tsp grated nutmeg

Instructions

  • Soak fruit in 375ml of cold tea overnight with the added sugar
  • Add one egg, flour, spices and mix and pour into a 2lb loaf tin
  • Bake at 180 Dec C for 1 and 1/4 hours or until a metal skewer comes out clean
  • Cool and eat, really nice toasted in a morning with butter on
