Spaghetti, Prawns And Rocket

Ingredients
- • 455g dried spaghetti
- • sea salt and freshly ground black pepper
- • extra virgin olive oil
- • 2 cloves of garlic, peeled and finely chopped
- • 1â€Â"2 dried red chillies, crumbled
- • 400g peeled raw prawns
- • 1 small wineglass of white wine
- • 2 heaped tablespoons sun-dried tomato purée, or 6 sun-dried tomatoes blitzed in a blender
- • zest and juice of 1 lemon
- • 2 handfuls of rocket, roughly chopped
Instructions
- Cook spaghetti
- Fry garlic and chilli in oil.
- When garlic browns add prawns for 1 minute.
- Add wine and tomato puree for 1-2 mins.
- Toss cooked spaghetti with sauce and add lemon and half the rocket and season
- serve with grated lemon and rest of rocket
