Shiro Shimeji Crostini

Ingredients
- 2 X Livesey Bros Shiro Shimeji
- 1 French Baguette
- 2 X Red Peppers
- 1 Round (230g) Brie
Instructions
- Slice the baguette into 24 rounds, drizzle with olive oil and grill until toasted either side, then leave to cool
- Thinly slice the red pepper and fry for 2 minutes until soft
- Separate the Shiro Shimeji and fry in a little olive oil for 4 minutes until soft
- Slice the brie into 24 slices, then top the bread with it. Grill for 2 minutes until the cheese begins to melt
- Top the crostini's with the red peppers and the Shiro Shimeji
