Ingredients
- 12 cleaned scallops
- 4 bacon rashers
- balsemic vinegar
- 100 gr spinach
- 50 gr rocket
- 50 gr cremefraiche
- milk
Instructions
- cut the rasher and panfry till crisp- leave to cool on kitchen towel
- liquidize spinach , rocket , cremefraiche and add milk to get correct consistency-sligjtly runny
- sear scallops on high heta for 2 min each side
- serve scallops on plate-top with bacon- drizzle with balsemic. On side of plate make a large "tear" with liquidized spinach. Serve at once possibly with some rustic toasted bread (optional)
