This Spanish-inspired seafood stew is bursting with flavors from the sea and the warm spices of paprika. Ingredients

  • 8 large raw prawns
  • 1tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 1tbsp hot smoked paprika
  • 200ml white wine
  • 400g can chopped tomatoes
  • 1 roasted red pepper, sliced
  • 225g skinless boneless white fish, cut into chunks

Instructions

  • Heat the olive oil and add the onion. Cook gently for 3-4mins until softened then add the garlic and paprika.
  • Cook for a further minute and add the wine. Allow to bubble for a minute or so then stir in the tomatoes.
  • Season and leave to simmer for 20mins. Stir the red pepper, fish and prawns into the stew.
  • Simmer gently for 4-5mins.
  • Serve with crusty bread.
