Seafood Stew (BBC Good Food)

Ingredients
- 8 large raw prawns
- 1tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1tbsp hot smoked paprika
- 200ml white wine
- 400g can chopped tomatoes
- 1 roasted red pepper, sliced
- 225g skinless boneless white fish, cut into chunks
Instructions
- Heat the olive oil and add the onion. Cook gently for 3-4mins until softened then add the garlic and paprika.
- Cook for a further minute and add the wine. Allow to bubble for a minute or so then stir in the tomatoes.
- Season and leave to simmer for 20mins. Stir the red pepper, fish and prawns into the stew.
- Simmer gently for 4-5mins.
- Serve with crusty bread.
