Ingredients
- 1 cup (packed) fresh basil leaves
- 2 tbsp finely chopped shallots
- 2 tbsp plain (non-fat) Greek yogurt
- 1/4 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 5 tbsp olive oil
- 2 cups (packed) red leaf lettuce (bite-sized pieces)
- 2 cups (packed) green leaf lettuce (bite-sized pieces)
- 3 cups small broccoli florets
- 1/4 cup plus 2 tbsp dried cherries
- 1 cup canned cannellini beans, rinsed
- 3 tbsp sunflower seeds
Instructions
- The Dressing:
- In a blender, combine basil leaves, shallots, Greek yogurt, salt, pepper and olive oil. Puree until smooth.
- The Salad:
- In a large bowl, toss together lettuces, broccoli, dried cherries, cannellini beans and sunflower seeds.
- Toss with dressing. Serve.
