Ingredients

  • 1 cup (packed) fresh basil leaves
  • 2 tbsp finely chopped shallots
  • 2 tbsp plain (non-fat) Greek yogurt
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 5 tbsp olive oil
  • 2 cups (packed) red leaf lettuce (bite-sized pieces)
  • 2 cups (packed) green leaf lettuce (bite-sized pieces)
  • 3 cups small broccoli florets
  • 1/4 cup plus 2 tbsp dried cherries
  • 1 cup canned cannellini beans, rinsed
  • 3 tbsp sunflower seeds

Instructions

  • The Dressing:
  • In a blender, combine basil leaves, shallots, Greek yogurt, salt, pepper and olive oil. Puree until smooth.
  • The Salad:
  • In a large bowl, toss together lettuces, broccoli, dried cherries, cannellini beans and sunflower seeds.
  • Toss with dressing. Serve.
