Ingredients

  • 200g chicken, chopped
  • 1 red onion, chopped
  • 2 sweet pepper, orange and yellow color, chopped
  • 1 zucchini, chopped
  • tomatoes
  • 3 sprigs thyme
  • 2 sprigs mint
  • 5 black olive, half-cut
  • salt
  • black pepper
  • 5 tbsp olive oil

Instructions

  • First, cut several kinds of vegetables and lay them on a heat-resistant dish.
  • Then sit some small pieces of chicken on top of the vegetables and put some fresh leaves of mint and thyme.
  • Sprinkle olive oil, salt, and black pepper on them. By roasting it for 40 mins in 180C, you will find gorgeous Mediterranean-style roast chicken and vegetables.
