These light and fluffy ricotta frittas are a delightful treat that is sure to impress. Ingredients

  • 455g of ricotta cheese
  • 2 tablespoons of grated parmigiana
  • 1 1/2 tablespoons of flour
  • 1 large egg
  • seasoning to taste

Instructions

  • Mix all the ingredients in a bowl and season
  • With a non stick pan add olive oil and place on a medium heat.
  • The fritta's should be approximately a tablespoon in size each so you can put a few in the pan at a time
  • Add the tablespoons of mixture to the pan and fry them for only a couple of minutes to they go golden brown colour. Once golden turn over and repeat on the other side of the fritta
  • they should have a crunchy texture on the outside and smooth and fluffy in the centre
  • Once done serve with a sprinkle of parmigiana and black pepper
