Rice Buns

Ingredients
- 4oz margarine
- 2 medium eggs
- 4oz caster sugar
- 5oz self raising flour
- 3oz ground rice
- few drops lemon essence
- glace cherries
Instructions
- Heat oven to 200c/400f/gas mark 6. Have ready 20 paper cases or well greased patty tins.
- Cream margarine and sugar until light and fluffy. Beat in eggs with milk.
- Mix flour and ground rice, add to creamed mixture alternately with the egg mixture. Mix well.
- Half fill the bun cases with the mixture, place a piece of cherry on top of each and bake for 15-20min until firm.
