Ingredients

  • 200g red quinoa , buy from health food shops and larger supermarkets (or use ordinary quinoa)
  • olive oil
  • 2 tbsp red wine vinegar
  • 1 garlic clove , crushed
  • 2 tsp ground cumin
  • 200g block feta cheese , crumbled
  • ½ cucumber , chopped
  • 150g spinach , roughly chopped
  • 4 spring onions , shredded

Instructions

  • Cook the quinoa following pack instructions – it should be tender but with a little bite. Drain well and spread over a platter or wide, shallow bowl to cool quickly and steam dry.
  • When the quinoa is just about cool stir through all of the remaining ingredients with plenty of seasoning.
