Ingredients
- 200g red quinoa , buy from health food shops and larger supermarkets (or use ordinary quinoa)
- olive oil
- 2 tbsp red wine vinegar
- 1 garlic clove , crushed
- 2 tsp ground cumin
- 200g block feta cheese , crumbled
- ½ cucumber , chopped
- 150g spinach , roughly chopped
- 4 spring onions , shredded
Instructions
- Cook the quinoa following pack instructions – it should be tender but with a little bite. Drain well and spread over a platter or wide, shallow bowl to cool quickly and steam dry.
- When the quinoa is just about cool stir through all of the remaining ingredients with plenty of seasoning.
