Ingredients
- 100g caster sugar
- 1 tsp vanilla paste
- juice 1 lime
- 1 pineapple , skinned and very thinly sliced (like pineapple carpaccio)
- vanilla or coconut ice cream, to serve (optional)

- Gently heat the caster sugar, vanilla paste, lime juice and 50ml water in a pan until the sugar dissolves.
