Perfect Banana Cake

Ingredients
- 100g butter
- 3 large eggs
- 100g Sugar
- 2 Over ripe bananas peeled and mashed
- 200g self raising flour
Instructions
- Preheat the oven to 180C
- Melt the butter on a low heat in a saucepan
- Turn off the heat and whisk in the eggs and the sugar
- Add the mashed banana's and flour and whisk throughly
- Pour the mix into a well greased oven proof dish (mine is 28cm square)
- Bake in the Oven for 20-25 minutes at 180C
