Ingredients
- 2 Tbs. olive oil
- 1/2 yellow onion, chopped
- 1 can (28 oz.) peeled whole tomatoes, seeded
- and diced
- 3 Tbs. roasted garlic paste
- 4 to 6 fresh basil leaves
- Salt and freshly ground pepper, to taste
- 1 lb. pasta, cooked
Instructions
- In a saucepan over medium heat, warm the olive oil. When the oil is hot but not smoking, add the onion and cook, stirring occasionally, until tender and translucent, 5 to 6 minutes. Add the tomatoes, stir to mix and bring to a simmer. Reduce the heat to medium-low and cook, stirring occasionally, until the sauce thickens slightly, about 20 minutes.
- Stir in the garlic paste and continue cooking, stirring as needed, 20 to 25 minutes more. Stir in the basil and cook until the leaves are tender and wilted, 2 to 3 minutes more. Season with salt and pepper. Toss the sauce with the pasta and serve immediately.
