Parmesan-Black Pepper Fricos

Ingredients
- 2 cups coarsely grated Parmigiano-Reggiano
- cheese
- 1 tsp. freshly ground pepper
Instructions
- Preheat an oven to 350°F. Line a baking sheet with a Silpat liner.
- For each <i>frico</i>, spoon about 2 Tbs. of the cheese onto the prepared baking sheet and spread into a 3-inch round. Space the rounds about 2 inches apart. Sprinkle the tops of the rounds with pepper.
- Bake until the <i>fricos</i> are crisp and golden, about 12 minutes. Transfer the baking sheet to a wire rack and let cool completely. Using a spatula, remove the <i>fricos</i> from the baking sheet. Makes about 16.
