Ingredients

  • 3 tablespoons extra virgin olive oil
  • 1 cup chopped white onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 tablespoon minced garlic
  • 50 ounces chicken broth
  • 3 cups cooked shredded chicken
  • 4 cups cooked thin noodles
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic salt
  • 1 tablespoon ground cumin
  • 1 cup salsa verde, mild
  • 1 lime, juiced
  • 1/2 cup chopped fresh cilantro

Instructions

  • Heat oil in a large dutch oven over medium heat. Saute onion, carrots, celery and garlic. Cook and stir for about 10 minutes, until slightly softened. Stir in chicken broth, chicken, noodles, salt, pepper, garlic salt, cumin, salsa verde, lime juice and cilantro. Simmer on low for 15 minutes then serve.
