Ingredients

  • 4 chicken thighs skinned
  • 4 chicken drumsticks skinned
  • 1 small butternut squash deseeded skin left on, sliced
  • 1 red pepper cut into 8 pieces
  • 1 orange pepper cut into 8 pieces
  • 2 red onions each cut into 6 wedges
  • 2 courgettes cut into 2cm rounds
  • 3tsp Jerk seasoning
  • 1 garlic bulb cloves separated left unpeeled
  • 250ml chicken stock
  • Fry light
  • Fresh coriander to garnish

Instructions

  • Preheat oven to 200c or gas mark 6
  • Slash each chicken piece and add to a bowl with butternut squash, peppers, red onions and courgettes.
  • Add jerk seasoning and mix throughly
  • Transfer chicken and veg to roasting tin add garlic cloves and stock
  • Spray with fry light
  • Roast in oven for 40-50 minutes turning chicken once
  • Garnish with coriander leaves
