Ingredients
- 8 Portabello mushrooms
- 8 slices marinated red pepper
- 8 basil leaves
- 150g ball of mozzarella
- 4 muffins
Instructions
- Preheat oven to 200c/180c fan, mark 6
- Put mushrooms on a roasting tin and season
- Top each with a slice of pepper and a basil leaf
- Slice mozzarella into 8 and place on each mushroom, season
- Roast for 15-20 mins, warm the muffins and top with a mushroom, serve with salad
