Ingredients
- 4 eggs
- ½ cup chocolate drops
- ⅓ cup vegan shortening
- 1 tablespoon organic decaf espresso, finely ground
- 1 teaspoon cinnamon
- 1 tablespoon vanilla extract
- 2 tablespoons coconut sugar
Instructions
- Pulse eggs in food processor for 3 minutes until fluffy
- Pulse in chocolate chips for 2 minutes, until well ground
- Pulse in shortening, espresso, cinnamon, vanilla, and coconut sugar
- Process until mixture is consistency of mousse
- Spoon into 6 half-cup ramekins or dessert cups
