Ingredients

  • 4 eggs
  • ½ cup chocolate drops
  • ⅓ cup vegan shortening
  • 1 tablespoon organic decaf espresso, finely ground
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla extract
  • 2 tablespoons coconut sugar

Instructions

  • Pulse eggs in food processor for 3 minutes until fluffy
  • Pulse in chocolate chips for 2 minutes, until well ground
  • Pulse in shortening, espresso, cinnamon, vanilla, and coconut sugar
  • Process until mixture is consistency of mousse
  • Spoon into 6 half-cup ramekins or dessert cups
  • Serve
