Ingredients

  • For the Salsa:
  • 2 tomatoes - small cubed
  • 1 red chili - finely chopped
  • fresh baby spinach- 1 handful
  • 1 onion- finely chopped
  • 1/2 lemon - juice
  • 1 tbsp black olives- finely sliced
  • coriander - handful, chopped
  • salt and pepper -seasoning
  • fresh salad leaves- Handful
  • mixed raisins and nuts - 1/2 handful
  • 1 Tbsp black Olives
  • 3 slices of sainsburys Melba toast
  • equipment:
  • small plastic tub

Instructions

  • For the salsa, combine all ingredients in a small tub, once filled, close and shake to combine.
  • In a serving bowl, place fresh salad leaves at the bottom. Spoon the salsa into the middle, sprinkle the mixed fruit and nuts around the salad. Add olives.
  • Place the melba toast in a fan style at the side of the bowl, and serve, adding more lemon juice and seasoning if required
