Ingredients
- 1/2 garlic clove
- 2 shelled fresh peas (from about 2 pounds pods)
- 3/4 finely grated Pecorino, preferably aged
- 1/4 fresh mint leaves
- 1/4 extra-virgin olive oil
- 2 fresh lemon juice
- Kosher salt
- Toasted bread and assorted cruditès (such as fennel wedges, carrots, asparagus, radishes, and cooked baby potatoes)
Instructions
- Pulse garlic, peas, Pecorino, and mint in a food processor until finely chopped. Add oil and lemon juice and process until a coarse purée forms. Season with salt.
- Serve pea mash with bread and cruditès.
- DO AHEAD: Pea mash can be made 6 hours ahead. Cover and chill.
