Ingredients

  • FOR THE SCHNITZEL
  • 200g minced beef
  • 200g minced pork
  • salt, pepper
  • 1 egg
  • 2tbsp plain flour
  • oil for frying
  • FOR THE SAGE BROWN BUTTER SAUCE
  • 80g butter
  • 1/4 cup choped sage leaves

  • Divide into four balls. With wet hands, flatten the balls on the palm of your hand into a 1cm thick Schnitzel.
  • Dip each Schnitzel in the egg, then flour and fry in hot oil for 3-4 min each side until cooked through and golden brown. Keep warm while you are cooking the rest.
  • For the sauce, melt the butter in a pan over medium heat. Add minced garlic, choped sage and cook for two or three minutes. Be careful not to burn the garlic. Pour the sauce over the Schnitzels and serve. Best to serve with mashed potatoes.
