Ingredients

  • 1 cup bulgar wheat
  • 1 cup boiling water
  • 1 medium tomato, chopped into bitesize pieces
  • 1 cucumber peeled & chopped into small pieces
  • 2 spring onions finely chopped
  • 1/4 bunch parsley chopped fine
  • 1/4 bunch mint chopped fine
  • 3 tbsp Olive oil
  • 3 tbsp lemon juice
  • Pinch salt

Instructions

  • Boil water, stir in the Bulgar Wheat cover & stand for 15 minutes. Fluff with a fork
  • Meanwhile, chop the vegetables, herbs & add to cooled bulgar wheat
  • Whisk the lemon juice, Olive oil & salt together then pour over bulgar wheat, and toss
  • Store to cool or serve immediately
