Ingredients

  • 2Tbsp oil
  • 1 garlic clove chopped
  • 1 red chilli chopped
  • 1 onion chopped
  • 2 red peppers chopped
  • 1 yellow pepper chopped
  • 2 courgettes finely chopped
  • 2 tins beans(blackeye,borlotti etc)
  • 150ml tomato passata
  • hot chili sauce (optional)
  • Flour tortillas,grated cheese,sour cream,guacamole,coriander to serve

Instructions

  • Heat oil in the pan+fry the onion for 2 mins before adding garlic,chilli+peppers
  • Fry mix a few minutes before adding courgettes+beans, add the passata+chilli sauce if using,cook for a further few minutes season with salt+pepper+ serve
