Ingredients

  • 4 egg whites (duck egg whites are the best)
  • 300g caster sugar
  • pinch of salt
  • 1/2 teaspoon vanilla extract

Instructions

  • preheat oven to 140C fan 120C gas mark 1.
  • Line 2 trays with greaseproof paper.
  • Put eggs and salt in a bowl and mix until soft white peaks form.
  • Add sugar tablespoon at a time.
  • Fold in Vanilla extract
  • spoon individually on to the trays and cook for 30 minutes.
  • let cool then enjoy
