Medterranean Vegetable Pasta

Ingredients
- 1 desert Spoon of Olive Oil
- 1 small onion
- 1clove garlic
- 1/2 red pepper deseeded and roughly chopped
- 1/2 yellow pepper " " " "
- 200g tinned chopped tomatoes
- 1/2 tsp caster sugar
- 1tsp extra-virgin olive oil
- 80g dried Penne pasta
- fresh or dried basil
- 10g Parmesan cheese finely grated.
Instructions
- Mist a pan with the oil and fry over a low heat for 5 minutes stirring until starting to soften. Add the garlic and fry for a further 1 minute, stirring frequently.
- Add the peppers with a splash of water and fry, stirring for 5 minutes. Stir in the the tomatoes, 1/2 a can of water and the caster sugar and cook over a low heat, stirring occasionally, for 20-25 minutes, until thickened. Stir in the olive oil and season.
- Bring a pan of water to the boil and add the penne. Simmer for 8-10 minutes until cooked but still with some bite. Drain and add to the tomatato sauce. Stir to mix. Transfer to a warm plate and serve garnished with a few fresh basil leaves and the parmesan cheese for sprinkling.
