Ingredients

  • For the Meat:
  • 500g diced pork
  • 1 tbsp extra virgin olive oil
  • 2 tbsp marjoram powder
  • 1 tbsp dried paprika
  • 1 tin chopped tomatoes
  • 2 tbsp tomato puree
  • 1 large red onion
  • 1 tsp dijon mustard
  • 1 tbsp Worchester Sauce
  • 1 tbsp vinegar
  • 1 tbsp lemon juice
  • 1 tbsp dried basil
  • To serve:
  • 150g cous cous
  • 200g seasonal veggies
  • 1 tbsp flaked almonds

Instructions

  • Heat the oil in a pan and fry diced pork for ten minutes, until browned
  • Add tinned tomatoes, tomato puree, onion, and all other ingredients into pan
  • Cook for a further 15 mins until sauce thickens
  • Meanwhile prepare seasonal veg and cous cous
  • Serve with flaked almonds
